Victorian Sponge Cake
Ingredients
Flour (Maida): 1 1/2 cups
Eggs: 4( Room Temperature)
Strawberry Jam: As much as like
Granulated Sugar: 1cup
Butter: 1 cup
Vanilla Essence: 1tsp
Baking Powder: 2tsp
(Frosting)
Whipping Cream: 1cup
Icing Sugar: 1tbsp
Recipe
First thing first, Strain flour and baking powder with a strainer and put aside.
Soften your butter in room temperature for about an hour, eggs should be out of the fridge at least 2 hours before you start preparing for the cake.
Pre heat oven at 180 degrees for 15 minutes to 40 minutes.
Lets get into the cake.
Add soften butter into a large bowl and mix with electric hand blender for about 2 minutes, than gradually add granulated sugar into the butter and keep mixing, until butter slightly changes its colour .
Start mixing your butter on a low speed and increase the speed to high.
Add eggs to the mixture one by one and mix well.
This part is extremly important so you have to mix eggs and butter well.
Add vanilla essence into the mixture.
Now its time to add dry ingrediants (flour and baking powder) into the wet ingrediants.
Fold all the ingrediants together with spatulla, batter would be thick in concistency. Don't worry about that. It is what it is.
Spread the batter into 3 pans equally and bake at 180 degrees for 25 - 30 minutes.
Dont forget to dust your pans with ghee/butter and flour. It will prevent batter to stick with pans.
Frosting:
Put Steel bowl and whisk into the freezer for 15 minutes before making the frosting.
Put whipping cream in the fridge 2 days before prepration.
Beat the cream on high speed for 5 minutes.
Add icing sugar spoon by spoon into the cream, not all at once and keep beating.
Pipe the frosting as you like on the cake slices along with strawberry jam.
Top the cake with jam, or fresh berries.
Dust the icing sugar if you like,
